In order to save money and lose some weight I've started making more meals at home. So I thought I'd share a couple of good ones.

Taco Pork Skillet
2 tbsp zesty italian dressing
1 lb pork cut into strips
1 package of taco seasoning
1 cup of red and 1 cup of green peppers
1-1/2 cups of instand white rice, uncooked
1-1/3 cup of water
1/2 shredded cheese

Heat dressing in large skillet, add pork, sprinkle with half of the seasoning mix. Stir fry for 2 mins. Add veggies, rice, water and remaining seasoning mix
Bring to the boil and reduce heat; cover and simmer for 5 mins

sprinkle with cheese and let stand for 5 mins

Southwestern Beef Skillet

1lb lean ground beef
1 tbsp chili powder
1 cup med chunky salsa
1 cup of water
1 cup of frozen corn
1 cup of frozen green beans
1-1/2 cups of instant white rice, uncooked
1 cup of shredded cheese

Brown meat with chili powder
Add salsa, water, corn, and green beans
Bring to the boil, stil in rice; and cover, reduce heat and simmer for 5 mins.
Top with cheese; cover let stand for 5 mins
